I’m Chef Greg Dunham, and my culinary philosophy is simple:
Safety first. Flavor always.
I’ve spent years working in professional kitchens, but gluten-free cuisine became my entire focus when the folks I love discovered their gluten intolerance and suddenly needed both safety and joy on the same plate. I watched them navigate the stress of every meal. They double-checked labels, asked question after question in restaurants, and still worried if their food was safe. That’s when I set out to turn gluten-free cuisine from an accommodation into a craft.
To do it right, I went to culinary school and studied the techniques and science that make both traditional and gluten-free food exceptional. I also have a unique advantage: I do not have a dietary restriction, so I use my palate as objective quality control. Every recipe is measured against the classic version. I remove the gluten and keep the pleasure of dining.
What I Do:
I help home cooks build safe, confident kitchens and master practical techniques that make everyday meals and baking shine. I also collaborate with professional kitchens that are exploring inclusive service, offering specialized foundational insight on safety, team awareness, and thoughtful gluten-free options that align with their concept.
