I’m Chef Greg, and my kitchen philosophy is simple: Safety is the foundation, and culinary joy is the ultimate goal.
My passion for mastering gluten-free cooking is deeply personal. I've spent years working in professional kitchens, but it was watching my own family and loved ones navigate the daily challenges of finding safe, delicious food that inspired me. I saw the anxiety that comes with every meal decision, and I became determined to elevate gluten-free cooking from an accommodation into a discipline of culinary excellence.
I decided to dedicate my expertise to solving that challenge, so I enrolled in culinary school to master the specific techniques and science needed to achieve perfection in this space.
I have a unique advantage: I myself do not have a dietary restriction, so I can use my palate as the ultimate quality control expert. I objectively test and refine every gluten-free recipe against the traditional standard, guaranteeing the texture and flavor are perfect every time. I remove the gluten, but I never compromise the dining experience.
